How to make a cupcake step-by-step?

  1. Preheat your oven to 180°C (160°C fan-forced) and line a 12-hole muffin tin with paper cases. Or use the cupcake mouldings, whichever you have.

  2. In a large bowl, whisk together the flour, baking powder, and salt until well combined.

  3. Add the butter and sugar to the flour mixture and use an electric mixer to beat on low speed until the mixture resembles coarse crumbs.

  4. Add the eggs, one at a time, beating well after each addition. Scrape down the sides of the bowl as needed.

  5. Add the vanilla extract and milk and beat on medium speed until the batter is smooth and creamy.

  6. Divide the batter evenly among the prepared muffin cups, filling them about two-thirds full.

  7. Bake for 18 to 20 minutes or until a toothpick inserted in the center comes out clean.

  8. Let the cupcakes cool slightly in the pan before transferring them to a wire rack to cool completely.

How to make the frosting for cupcakes

  1. In a large bowl, beat the butter with an electric mixer on medium-high speed until pale and fluffy, it should take about 3 to 5 minutes.

  2. Gradually add the powdered sugar, not more than one cup at a time, beating well after each addition. Scrape down the sides of the bowl as needed. This way all the ingredients will mix in well.

  3. Add the milk or water, vanilla extract, and salt and beat on high speed until the frosting is smooth and creamy, about 2 to 3 minutes.

If the frosting is too thick, add more liquid, one teaspoon at a time, until you reach the desired consistency.

If the frosting is too thin, add more powdered sugar, one tablespoon at a time, until you reach the desired consistency.

Make sure it is smooth and creamy.

  4. If you want to color your frosting, add a few drops of food coloring and beat until well combined.

To pipe frosting on cupcakes

  1. Prepare your piping bag by cutting off the tip of the bag and inserting the coupler base if using one. Then insert the piping tip of your choice and secure it with the coupler ring if using one. Fold over the top of the bag to create a cuff and place it in a tall glass or cup for easy filling.

  2. Fill your piping bag with frosting by using a spatula or spoon to transfer it from the bowl to the bag. Fill it only about two-thirds full and squeeze out any air bubbles. Twist or tie the top of the bag to seal it and prevent the frosting from leaking out.

  3. Hold your piping bag at a 90-degree angle over the center of a cupcake and apply steady pressure to squeeze out the frosting. Start from the center and work your way outward in a circular motion, creating a swirl or spiral of frosting. Release the pressure when you reach the edge of the cupcake and lift up the bag quickly to create a peak or tail of frosting.

Repeat with the remaining cupcakes, changing piping tips if desired.

Frequently Asked Questions

Expand All:
Why are my cupcakes dry and crumbly?

There are several possible reasons why your cupcakes are dry and crumbly, such as:

  • You overmixed your batter, which developed too much gluten and made your cupcakes tough and dense.
  • You overbaked your cupcakes, which dried out your cupcakes and made them hard and crusty.
  • You used too much flour, which absorbed too much moisture and made your cupcakes dry and heavy.
  • You used too little fat, sugar, or liquid, which reduced the moisture and tenderness of your cupcakes.

Why are my cupcakes flat or sunken?

There are several possible reasons why your cupcakes are flat or sunken, such as:

  • You used too much leavening agent, such as baking powder or baking soda, which caused your cupcakes to rise too quickly and then collapse.
  • You used too little flour, which did not provide enough structure and support for your cupcakes.
  • You used expired ingredients, such as baking powder or eggs, which lost their leavening power and did not help your cupcakes rise.
  • You opened your oven door too soon or too often, which lowered the oven temperature and interrupted the baking process.

How can I make my cupcakes more moist and fluffy?

There are several ways to make your cupcakes more moist and fluffy, such as:

  • Use a Japanese baking technique called reverse creaming, which involves mixing the dry ingredients with the butter first, then adding the eggs, vanilla, and milk. This creates a finer and more even crumb structure, which results in softer and lighter cupcakes.
  • Use buttermilk or sour cream instead of regular milk, which adds more moisture and acidity to the batter and helps create a tender crumb.
  • Add some oil or yogurt to the batter, which adds more fat and moisture and helps keep the cupcakes moist for longer.
  • Add some cornstarch or pudding mix to the flour, which helps retain moisture and create a softer texture
